In this newly-recorded episode, Dan hits up familiar Trappist brewery Chimay for their Belgian Single, Dorée.
Chimay Doree
Chimay Doree (Dorée) is a 4.8% Patersbier aka Belgian Single brewed at “in the heart of Scourmont Abbey”. Until recently, it was only served for the monastic community, their guests and staff.
Appearance
Golden, straw-like in color, hazy, with a very fluffy and active head and carbonation.
Aroma
Nice blend of grain and ester, with the spices (coriander and orange peel) gently hovering through the nose.
Taste
Balanced and light, with the orange peel leading on my palate. Highly-sessionable, so I could understand why this would be commonly served/enjoyed by the monks.
Mouthfeel
Unlike Belgian Witbiers, this Single carries a weightier mouthfeel which I feel makes the bottle more satisfying (bottle is 11.20 fluid ounces).
Overall
An amalgamation of Witbier, Golden and Blonde all in one in some ways. This beer is accessible regardless of your beer palate, so definitely lead off your Chimay tasting with this ale. Also it is probably very food-friendly and would love to use this for mussels.
