Care of a pick-up following his visit to Wild East, Dan cracks open Subtle Reference, a foeder-aged Czech-style Pilsner collaboration.
Wild East Brewing Company Subtle Reference
STYLE: Foeder-aged Czech-style Pilsner
INGREDIENTS: Saaz hops
ABV: 5.3%
IBU: 40
AVAILABILITY: 16oz Cans, Draft (Limited)

Stats above taken from the brewery’s can, website, and Untappd.
Appearance
Golden in color with quarter-inch, persistent, white head.
Aroma
Complex, with wildflower-like nose mixed with fruit and a little wood/oak note.
Taste
Hops present more earthy/herbal on the mid-palate and finish, with the malt providing great balance of graininess.
Mouthfeel
Refreshing and extremely dry, with the time in the foeder adding weight and texture to the mouthfeel to accompany the zippy carbonation.
Overall
This is the kind of beer that I would love to have a few of during a hang in a beer hall or garden before moving to bigger styles. Pairing-wise, the dryness of the beer could go a long way with many cuisines like German, but I was having hot dogs that night, so it spoke to me.
Thank you so much to Joel for joining me on a mini-crawl to Wild East and other locations!
Cheers and remember:
